Applied Innovation in Functional and Specialty Fats

The Apical Innovation Centre (AIC) works with customers and partners to improve the performance of edible oils and fats in real applications.

Our team collaborates with customers to refine products, adapt them to specific use cases, and assess performance at a pilot scale in facilities that reflect real production conditions. This hands-on work supports the move from trials to larger-scale production, helping our customers solve real-world problems through custom-designed edible oils and fats.

Core facilities and capabilities

AIC’s facilities are designed to support practical collaboration across formulation refinement, application testing, and production readiness. Each space reflects how functional and specialty fats are used in real manufacturing environments.

Research & Development (R&D) Lab

At the R&D Lab, our team develops the initial formulations of oils and fats, paying close attention to how they perform in real applications. Each formulation is created with a clear objective, whether to improve structure, stability, or overall functionality, before moving into the next stage of application testing.

Our work in the lab typically includes:

  • Developing functional and specialty fats to meet specific performance needs
  • Matching existing fats or identifying suitable formulation options based on customer requirements

During this stage, our team works closely with customers to develop and refine prototypes. Each formulation goes through multiple rounds of testing and adjustment, allowing us to optimize performance and address potential challenges early. This careful approach ensures that only well-prepared formulations move on to the Application Lab for real-food evaluation.

Application Lab

The Application Lab turns formulations into finished food products that customers can see, taste, and use in real production settings. While the R&D team develops fats and oils, the Application Lab applies them in actual food. The focus is on making sure each formulation works in practice, not just in theory.

Work in the Application Lab goes beyond testing. The team develops application recipes and adjusts processing steps as needed. They observe how each formulation performs during production and identify issues early. This helps ensure the product is suitable for its intended use.

Trials are carried out under normal production conditions, including:

  • Baking applications
  • Frying performance
  • Confectionery and coating trials

During these trials, the team assesses taste, texture, stability, and overall performance. Customers can see how the product behaves in its final form and evaluate whether it fits their needs.

The Application Lab also supports the move toward larger-scale production. Pilot batches are prepared early in the process. Production steps are refined along the way. This reduces repeated trials, shortens approval time, and supports the transition to larger-scale production.

Key services and offerings

1

Formulation matching and refinement

AIC works with customers to review existing oils and fats and assess how well they meet current needs. Where adjustments are needed, teams help refine formulations to improve functionality, consistency, or compliance. This may involve comparing alternatives or making targeted changes based on application requirements. The goal is to help customers move forward with solutions that are fit for purpose.
2

Application development and trials

The team supports application trials by working directly with recipes and processing steps used by customers. Oils and fats are tested in real food systems to see how they behave during preparation and use. This helps identify performance gaps that may not appear at bench scale. Findings from these trials guide practical adjustments before moving further.
3

Process and performance optimization

AIC helps customers look beyond the formulation and focus on how products perform during processing. This includes reviewing handling, temperature ranges, and processing conditions that affect results. Small changes at this stage can improve stability, efficiency, or product consistency. The focus is on solving issues that show up during day-to-day operations.
4

Pilot-scale validation and scale-up support

Before moving to larger production, AIC supports pilot-scale validation to reduce uncertainty. Working at this scale allows teams to check whether adjustments hold up outside the lab. Potential issues can be identified and addressed early. This helps customers prepare for smoother transitions to full-scale production.

Frequently Asked Questions (FAQ)

1

What is the Apical Innovation Centre (AIC)?

The Apical Innovation Centre (AIC) is Apical’s applied innovation facility in Marunda, North Jakarta. It supports customers and partners in testing and refining oils and fats in real food applications. The focus is practical: understanding performance in use, addressing application challenges, and generating insights to support informed product and process decisions.
2

Who can collaborate with AIC?

AIC works with food manufacturers, MSMEs, distributors, and other partners seeking application-focused technical support. Collaboration is open to both existing Apical customers and new partners, subject to alignment between project objectives, application requirements, and the feasibility of trials using available facilities.
3

What services does AIC provide?

AIC provides support across three core areas: formulation refinement, application development and testing, and pilot-scale validation. This includes evaluating how oils and fats perform in specific applications, identifying gaps against target requirements, and supporting adjustments based on trial results.
4

How does a typical collaboration with AIC work?

Collaborations typically begin with a technical discussion to understand the intended application, processing conditions, and desired outcomes. Based on this, trials are designed and conducted, results are reviewed together with the customer, and next steps are agreed—whether further refinement, additional testing, or preparation for pilot-scale validation.
5

Does AIC support preparation for larger-scale production?

Where relevant, AIC supports preparation for larger-scale production through application trials and pilot-scale validation. This helps assess product performance under conditions that better reflect production environments and identify potential considerations before moving beyond laboratory-scale work.
